It snowed in Utah on Monday. My pretty purple lilacs were weighed down with heavy snow. I was not happy, but luckily the snow has melted. The sun is shining again and I hope it is here to stay. I made this strawberry mango jicama salad because is screams summer and I am ready for warm weather.
This salad is a perfect side dish to any summer meal. The strawberries and mango are juicy, sweet, and vibrant. The jicama provides a nice crunch to this simple salad. The cilantro and lime are the perfect finish to this bright and exquisite salad.
I think I will make a big bowl of this strawberry mango and jicama salad for our Memorial Day barbeque. What are your favorite bbq sides?

Strawberry Mango Jicama Salad

Ingredients
- 2 cups sliced strawberries
- 1 cup chopped mango
- 1 cup chopped jicama
- 1/4 cup chopped cilantro
- 3 Tablespoons fresh lime juice
Instructions
In a medium bowl, stir together the strawberries, mango, and jicama. Add in the cilantro and lime juice. Stir until well combined. Serve at room temperature or chilled.

Could you believe that snow storm? I love jicima, but sometimes it is so hard to cut, especially if it is extra large. I have so many favorite side dishes for BBQ’s . . but I do love the cowboy bean dish with chips. It’s always a hit and I always come home with an empty dish. Have a great weekend.

This looks so refreshing. I wish I could hunt down some jicama. I’ve never been able to find any and it sounds delish. My favorite side? Corn on the cob. 😀

Kristen-I think I shed a tear when I saw all of the snow on my pretty lilacs. It is melted now and hopefully it is gone for good!
This looks great… I have only ever had jicama in a slaw before, but I think it would be wonderful in this salad. I’ll have to keep my eyes out for some jicama so that I can make this!

What a riot of colours.
And mangoes- its a crime to remind an Indian of mangoes at this time of the year. Especially if they are away from home. Sigh.

Strawberries and mangoes – I have not tried that combination before – because generally mangoes are available in summer and fresh strawberries in spring. Anyway, I am going to try out your recipe. Thanks for the great share.

I LOVE THIS RECIPE!!
It was my first taste of jicama and I fell for it! I have sub the mango for papaya one time and the strawberries for peaches another time. Just working with what I have! The strawberries give it beautiful color. But both ways taste amazing! As well as the original! Thank you so much for sharing this recipe!Reply
