  • Cheese options: Feta (used in this recipe), goat cheese, shredded cheddar or any of your favorite cheese options
  • Additional toppings: Bacon, chorizo or sausage. You could even add in peppers if you want to spice it up a bit!

The best option is to use frozen broccoli florets in this dish for one main reason: no chopping! Because, let’s be honest, who loves cutting up broccoli?! Plus, fresh broccoli goes bad much more quickly than frozen. Of course, if you use fresh broccoli, cook time will vary slightly.

Ingredients

  • 1 Tbs. butter
  • 1 1/2 cups broccoli florets frozen
  • 4 large eggs
  • Salt

Toppings

  • 1/2 large avocado
  • 1/2 cup feta cheese crumbled

Instructions

  • Saute broccoli. Put 1 Tbs. butter in skillet. Melt. Add broccoli. If you're using fresh broccoli, adjust cooking time. Cook at medium-high heat. Sprinkle salt if you'd like things a bit saltier. Broccoli cooked from frozen is about 5 minutes.

  • In medium bowl, beat eggs. Add 1 small pinch of salt per egg.

  • Add eggs to broccoli skillet and scramble. Turn heat to low. Cook for 2 minutes.

  • Turn off heat once eggs start to solidify. Eggs keep cooking with residual heat.

  • Top with avocado and feta cheese.

    This is one of those staple recipes in our house. But I’ve figured out a way to make them to go. I use a Siete cassava tortilla and heat it up then fill it with the broccoli egg mixture place an avocado slice and sprinkle a little cheese roll up and you’re out the door with a delish and easy breakfast. These freeze well too. Then just wrap in a wet a paper towel and heat in microwave.

    Love your breakfast recipe! My kids always love when I make fried or roasted corn tortillas triangles, beat some eggs and pour over, add veggies or a meat, top with cheese and hot sauce. The traditional way, it’s with enchilada sauce but my kids prefer a small amount of hot sauce or a can of spicy tomato “el patio” sauce. BTW absolutely LOVE your email campaign! My FAV.

    I have a hard time eating eggs fro breakfast and often have soup in the winter. this summer I discovered your cherry smoothie recipe with yogurt, honey (which I leave out), frozen cherries and some water. I added chocolate protein powder to the smoothie and love it!

    My favorite breakfast is making a frittata – using whatever fresh veggies I have on hand.
    The one item that is a must, is sprinkling a bit of goat cheese on top before baking. 🙂

      HEALTHY BAKED APPLE OATMEAL

      Baked oatmeal with tender apples, cinnamon, and naturally sweetened with maple syrup is full of fiber and deliciously healthy! It’s a great way to start your day!

      * Yield: Serves 4 – 6

      INGREDIENTS

      * 2 cup old-fashioned oats
      * 2 teaspoon cinnamon
      * 1/2 teaspoon nutmeg
      * 1 teaspoon baking powder
      * pinch of mineral salt
      * 2 cup unsweetened almond milk
      * 1 cup mashed banana, optional
      * 1/4 cup pure maple syrup, optional
      * 1 teaspoon vanilla extract
      * 1 medium apple, use your favorite (I used Fuji), cored and diced
      * 1/2 – 1 cup walnuts, chopped
      To serve
      * sliced apple
      * pure maple syrup
      * unsweetened almond milk
      * unsweetened toasted coconut flakes (it’s delicious!)

      INSTRUCTIONS
      Preheat oven to 350 degrees F. Lightly grease your baking dish with coconut oil if you like (generally I skip this step).
      Mix: In an 8 × 8 baking dish, add oats, cinnamon, nutmeg, baking powder and salt, mix well. Add in the milk, banana, optional syrup and vanilla, gently whisk to combine. Top with chopped apples and walnuts, mix them in if you like.
      Bake: Place in the oven on the middle rack and bake for 30 minutes. Once done, let cool slightly.
      Serve: Slice and serve warm in individual bowls with toppings of choice. Voila’….enjoy this most delicious and worth the wait oatmeal!
      Serves 4 – 6
      NOTES
      If you like, add the spices to the mashed banana, mixing well, to ensure even distribution of the spices. (see comments)
      If using bananas that are not overly ripe or you’re using a tart apple, you may like to add ¼ cup of pure maple syrup to the mixture when adding the milk and other wet ingredients. Or simply add extra maple syrup when serving.
      If you don’t have an 8 × 8 baking dish, a 9 × 9 will work too. Dish can be round or square.
      I don’t tend to grease my baking dish when making baked oatmeal. I’ve never had a problem with sticking, but feel free to lightly grease yours if you prefer.
